Tropical Pineapple cupcakes

Cupcakes have become a favorite dessert worldwide due to their easy preparation and endless possibilities for customization – from classic flavors like blueberry and chocolate to exotic combinations like this pineapple recipe.

Cupcakes were first recorded in England during the 18th century as simple bread cakes. Modern muffins, as we know them today, evolved in America. Today, they are made in every imaginable flavor and size.

Pineapple cupcakes combine juicy texture, tropical flavor, and atmosphere. In addition to bringing a refreshing taste, pineapple is rich in nutrients. It provides plenty of vitamin C, enzymes like bromelain that help digestion, and antioxidants that support immunity and skin health.

Pineapple originates from the tropical regions of South America. The Tupi-Guarani Indians were the first to grow and consume this fruit. The name pineapple comes from the Tupi language, where nana means “excellent fruit”. There are many types of pineapple, the most famous are: Smooth Cayenne, Red Spanish, Queen, Sugar Loaf, and Golden Sweet. Golden Sweet is often used in desserts because of its outstanding sweetness and juiciness.

INGREDIENTS

Cake

2 eggs
100 g sugar
1 packet of vanilla sugar
250 g plain flour
1/2 baking powder
120 g butter
1 fresh pineapple (or canned pineapple)
a pinch of salt

Topping

250 ml whipping cream
1 stabilizer for whipped cream

DIRECTIONS

Cake

Using a hand-held mixer, beat the butter until it becomes foamy. Gradually add the sugar, vanilla sugar, and a pinch of salt, mixing until you achieve a uniform consistency. Add one egg and mix briefly, then add a second egg and stir shortly.

Next, gradually incorporate the sifted flour with baking powder. Slowly mix in about 10 tablespoons of pineapple juice from the can. Finally, fold in 4-5 finely chopped pineapple rings, stirring lightly with a spoon.

Place paper cups into a cupcake mold and fill each cup with batter up to about two-thirds full. Bake in a preheated oven at 180°C (350°F) for approximately 20 minutes. Once the cupcakes are cooled, decorate them to your liking with whipped cream, cream cheese, melted chocolate, and fresh or candied fruit.

Topping

Pour the whipping cream into a bowl and add a stabilizer for whipping cream. Mix with the hand-held mixer at maximum speed, until you get a firm whipped cream. Fill the pastry bag with the cream and decorate the cupcakes as desired.
