Ingredients
Cake
5 eggs
150 ml milk
120 g sugar
50 g (hard) wheat flour type 400
40 g bitter cocoa
1/2 baking powder
1 vanilla sugar
Cream
200 g dark chocolate
400 ml heavy cream
4 tbsp orange juice
1 tsp grated orange peel
4 tbsp rum
Chocolate glaze:
200 g dark chocolate
100 g butter

Cake
With a hand-held mixer, beat egg whites until they become stiff. In a separate bowl, beat egg yolks, sugar, and vanilla sugar until it gets foamy. Add flour, baking powder, and cocoa, then add milk and at the end add egg whites slowly with a spatula. Line three tins (23 × 32 cm in diameter) with baking paper and pour in the prepared batter. Each cake layer is baked in a preheated oven at 180° C for about 8 minutes.
Cream
Put the heavy cream in a saucepan and bring to the boil. When it boils, pour over chocolate chunks and stir until the mixture gets well incorporated (until all the chocolate dissolves). Add orange juice, orange grated peel, and rum into the chilled chocolate mixture and stir until a smooth cream is obtained.
To assemble the cake, spread half of the frosting over the first cake layer, proceed with other cake layers, and finish with chocolate glaze. Serve chocolate cubes well chilled. Decorate the cake with chocolate decoration. Use white chocolate decorations if you want to highlight the contrast.
